How a Shaken Espresso Is Made
The barista pulls the shots into a shaker with ice and the syrup, shakes for about ten seconds, and pours the whole thing over fresh ice. The shaking chills and aerates the espresso so it turns light and foamy on top, and the milk goes in last as a float rather than a base. That is why the drink looks layered and why it is stronger than it looks.
The shot count runs higher than a latte: a Tall gets two shots, a Grande three and a Venti four. Most of the builds use Blonde Espresso, which is why the caffeine sits at 255 mg in a Grande against 150 mg for an iced latte.

Four of the six land close together because they share the same recipe with a different syrup. The two outliers both add a cold foam, and the foam alone is worth more calories than the whole base drink.
Shaken Espresso vs Iced Latte vs Cold Brew
Against the Iced Caffè Latte: the latte has more milk, less coffee and 150 mg of caffeine to the shaken espresso's 255 mg. The shaken drink tastes more of espresso because the milk is a splash, not a base.
Against Cold Brew: cold brew is smoother, unsweetened, 5 calories and 205 mg. The shaken espresso is brighter and sharper because it is fresh espresso, and it carries syrup by default. If you want strong and black, cold brew; if you want strong and lightly sweet with a foam top, shaken espresso.

- Fewer pumps: the standard is one pump per shot, so a Grande has three. Two is the common request.
- Different milk: any milk works as the splash; 2% is used in the original, oat in the others. Almond keeps it lightest.
- Extra shot: a Venti already has four; an extra shot pushes past most people's afternoon limit.
- Decaf: any of the builds can be pulled on decaf Blonde and still tastes the same.
- No syrup: the barista will shake the shots plain. It becomes an iced espresso with a milk float.
- The reference store lists a Grande price for every build here; sizes run Tall, Grande and Venti with no Trenta.
