What Blonde Roast Means at Starbucks
Starbucks introduced the Blonde Roast in 2012 for customers who found its dark roasts too heavy. The beans are roasted for a shorter time to a lighter color, which keeps more of the origin flavor, more acidity, and a little more caffeine than a dark roast, since roasting burns some off. Blonde coffees taste of citrus, toasted nuts and grain rather than smoke and caramel.
They are also the roasts that take milk least well. A blonde cup is at its best black, or as the base for an iced coffee where the brightness reads as freshness.

The Starbucks Sunsera Blend is the 2025 blend built to be the everyday blonde, balanced and smooth with citrus and almond notes. It is the coffee in the store's blonde urn, so a bag at home tastes like the blonde brewed coffee at the counter.
Starbucks Green Apron Blend
The Starbucks Green Apron Blend is named for the barista apron and was blended for the people who wear it: orange and graham cracker notes, a little sweeter than the Sunsera, and the pick for a pour over.
Veranda Blend
The Veranda Blend is the original blonde from 2012, a Latin American blend with soft cocoa and toasted nut notes. It is the gentlest coffee Starbucks sells and the one to hand someone who says they do not like Starbucks coffee.

The Starbucks Blonde Espresso Roast is the espresso that goes into every Blonde latte and shaken espresso in the store, roasted lighter than the Signature Espresso Roast for a softer, sweeter shot. At $3.75 a pound it is the one bag on this shelf the reference store prices.
Which Blonde for Which Brewer
- Drip machine: Sunsera or Veranda, medium grind, the standard two tablespoons per six ounces.
- Pour over: Green Apron, slightly finer, and let it bloom; the citrus comes through.
- Espresso machine: Blonde Espresso Roast, fine grind, and expect a shorter pull to taste right.
- Moka pot: Blonde Espresso Roast at a medium-fine grind; blondes take heat better than dark roasts in a moka.

Blonde vs Medium vs Dark
Against a medium such as Pike Place Roast, a blonde has more acidity, less body and a touch more caffeine. Against a dark such as Italian Roast, the difference is night and day: no smoke, no bitterness, and a cup that tastes of the bean's origin rather than the roaster's drum. People who add a lot of milk and sugar usually prefer medium or dark; people who drink black usually prefer blonde or medium.
Buying and Storing Blonde Beans
- Stores sell 1 lb bags of whole beans and will grind them at the counter for any brewer you name.
- Buy whole bean and grind at home if you can; blonde roasts go stale faster than dark because there is less surface oil to protect them.
- Keep the bag sealed, out of light, at room temperature. Not the fridge.
- Use within two to three weeks of opening for the citrus notes to survive.
